Bacon the way it's suppose to be!

Ingredients:

-Bakers Bacon, Double Smoked, 10-12 ct. strips, cut into 1/4 inch lardoons, baked in the oven at 400 degrees until brown.  (Reserve the fat for the potatoes.)

-Red Potatoes, cut into ¼’s, tossed with the bacon fat and a little olive oil, and fresh cracked pepper, put on parchment lined sheet tray and roast at 400 degrees until golden brown.  (Salt after roasted in the oven!

-Yellow Onions, peeled, cut in half, skinned, and sliced 1/4 inch thick, toss in olive oil, and roast at 400 degrees until brown.  Salt after they come out of the oven!

-Red, Yellow, & Green Bell Peppers, washed, cut in half, seeded, and sliced 1/4 inch thick, toss in olive oil, and roast at 400 degrees until brown.  Salt after they come out of the oven!

-After all are vegetables are roasted off, Toss Gently in a Large Bowl Adding:

-Apple Cider Vinegar

-A Little Brown sugar

-Dijon Mustard

-A Little Celery Seed

-A Little Smoked Paprika

 

-Place the mixed vegetables on a foil lined sheet tray to be heated up right before service.

-Taste for Seasoning of Salt and Pepper

-Sprinkle Freshly Chopped Parsley over the mixture before served!!
