1#   Butter

3#   Bakers Bacon, Double Smoked, Small Diced

10 ea   Yellow Onions, Peeled And Small Diced

1 stalk   Celery, Small Diced

10 ea   Carrots, Peeled And Small Diced

1/4 cup   Garlic, Chopped Fine

2 ea   Ham Hocks

1 bunch   Fresh Thyme, Picked And Chopped

6 ea   Bay Leaves

5#   Split Green Peas, Washed & Picked Over (No Rocks)

To cover   Chicken Stock (Base & Water)

To taste   Salt, Pepper, And Tabasco Sauce

 

 

Garnish:

 

Top The Soup Off With Small Toasted Croutons And Chopped Parsley.

 

Method:

 

-In The Soup Kettle, Heat The Butter And Add The Bacon.

-Cook The Bacon Until It Turns Light Brown.

-Add The Onions, Celery, Carrots, Garlic, Ham Hocks, Thyme, And Bay Leaves.

-Cook Until The Onions Turn Clear.

-Add The Split Peas And Cook For Another 2 Minutes.

-Add The Stock Just To Cover All Ingredients.

-Simmer Until The Peas Are Tender, But Not Over Cooked!!!!!!!

-Remove The Hocks And The Bay Leaves.

-Remove The Meat From The Hocks, Dice It Up, And Set Aside.

-Take 1/2 The Peas Out And Blent Until Smooth.

-Put The Blended Peas Back Into The Soup To Thicken It Up.

-After Getting The Right Consistancy, Add The Diced Hocks Back To The Soup.

-Adjust Seasonings With Salt, Pepper, And Tabasco Sauce.

 

Garnish:

 

Top The Soup Off With Small Toasted Croutons And Chopped Parsley.
